Boozy Stew & Dumplings (Vegan version of The Hairy Bikers recipe)

Hanski's boozy vegan stew -adapted from 'The Hairy Bikers Oxtail stew with mini dumplings' (as seen on TV). Quick and easy to make, you will find no tails of dead cows here. After further experimentation, I suggest adding the Tesco veggie mince just after sweating the veggies! Ingredients The Stew• Tesco veggie mince• 2 onions, halved and sliced• 2 smoked garlic cloves, finely chopped (unsmoked is fine)• 2 sticks celery, trimmed and diced• 3 carrots, peeled and diced• 3-4 tbsp olive oil• 400ml veggie stock (I used Kallo) • 1 tsp thyme or dried italian seasoning• 2 fresh bay leaves, or 4 dry ones• 1 can chopped tomato (I used napolina)• 300ml/10fl oz vegan red wine• 2 tbsp yeast extract (Marmite or Vegemite)• 2 tbsp tomato purée• flaked sea salt and freshly ground black pepper• 2 tbsp cream sherry to stir in at the end For the mini parsley dumplings• 100g/3½oz shredded veggie suet (Atora is good)• 200g/7oz self-raising flour• 3 tbsp finely chopped parsley or dry italian seasoning• ½ tsp flaked sea salt• 150ml/5fl oz cold water
