US baker shows how satisfying stretching bread dough can be

This baker from Chicago shows how stretchy sourdough can be in an oddly satisfying video.

The clip, filmed on September 15, shows @FullProofBaking's Kristen building up the strength in her sourdough bread by stretching it and testing its elasticity.

Kristen explained to Newsflare: "The dough here is made with a mixture of spelt and bread flour, and this video spotlights dough extensibility - the gluten that develops in spelt dough causes the dough to be very loose, stretchy, and supple.

"It is important to build up strength in a sourdough during the fermentation so that the final loaf does not turn out flat like a pancake, but springs up nice and tall in the oven spring!"
