This shop in Delhi uses a block of ice weighing 40 kilograms to make the popular delicacy roller ice cream.

The ice is crushed into smaller chunks and placed inside the roller which is then spun around by the operator.

The rest of the ingredients are then distributed evenly across the roller as it turns.

Papaya, watermelon and oranges are added to this particular flavour and several sweet syrups are later added.

Jatin Rajput, the owner of the shop, said: "My grandfather started it. I'm the third generation. Earlier, we used to sell it only on weekends, however, now we do it every day after an increase in demand."

If you are fond of sweets, chances are you have eaten ice-cream. The icy delicacy was first eaten in China in 618-97AD. According to history, King Tang of Shang had 94 ice men who helped to make a dish of buffalo milk, flour and camphor. The technique, taste and ingredients have changed since then.

While ice-cream rolls took India by storm, a new trend has emerged since. In the new decade, Indian's have taken a liking to roller ice-cream. Imagine ice-cream rolls, but much bigger in size.

A shop in northern India's Geeta Colony, Delhi, which sells the delicacy, starts with filling an iron roller with ice. A block of ice weighing 40-kilogram is first broken into smaller pieces and loaded inside the metal structure. Copious amount of salt is added to keep the ice from melting. Once filled, the roller is shut tight with a rubber base, a metal plate and bolts.

The staff then loads it into a stand. Next, the base is added. It is a mixture of rabri (a sweet milk-based dish) and cream. The man spreads it evenly while another man rotates the roller. After several cups of the sweet concoction is added and a thick base is formed, in comes the fruits. The shop uses seasonal fruits. Visuals showed the man adding papaya, watermelon, oranges, pomegranates and sweet lime. The addition of pomegranates gives the otherwise yellowish delicacy a red tinge, making it bright and eye-catching.

Next, several sweet syrups, including chocolate, are added.

A plate is priced at Rs 70 (USD 0.94).

Speaking to Newslions, Jatin Rajput, the owner of Dhani Ram Kulfi and Chaat, said it is his family business. "My grandfather started it. I'm the third generation. Earlier, we used to sell it only on weekends, however, now we do it everyday after an increase in demands."
