A Thai bakery makes delicious treats from the controversial 'smelly' durian fruit - which causes buildings to be evacuated over gas leak fears.

Baker Ailada Meepang, 31, picks out fresh Mon Thong durian fruits for the speciality dishes at her shop in Phitsanulok province, Thailand.

The tropical durian is notorious for its distinct smell, which has been likened to spoiled meat, vomit, and even sewage. It has repeatedly caused evacuations of schools, theatres and sports centres due to the pungent scent making people believe a gas leak is present.

However, the controversial fruit has also been praised for the creamy and custardy flavour of its tender pulp.

Ailada's shop, LADA bakery, processes the stinky fruit and incorporates it into the whipped cream, flour, and sauce to ensure all components of the durian cakes are infused with its distinctive flavour. Because of its intense odour, customers can choose how much durian they want to put into the cake, and they are charged accordingly.

Footage shows how Ailada carefully builds the durian-shaped treat. She uses chiffon as its base, then pours durian sauce over the sponge and smothers it in durian cream.

The dessert is topped with fresh durian paste before Ailada painstakingly pipes tiny spires of pastel green cream to mimic the fruit's thorny rind.

Each cake slice costs 299 THB, while a bowl-sized serving costs 89 THB. Ailada adjusts the cake's price depending on the fruit's market value.

The baker said: ‘It’s only been a week since we started selling durian cake, and the sales have been very good. Making durian cake during its peak season increases income for our bakery.

‘I have been in the baking business for five years now. Despite coming up with new cakes, our most iconic orange cake is still making promising sales. Customers are always welcome to visit LADA bakery to taste our delicious cakes.’
