Watch the fascinating process of making honey-infused coffee at a plantation in Thailand.

Footage shows the coffee cherries being picked and sorted in a tub at a height of around 1,300 metres above sea level on the mountain farm in Chiang Rai province in the remote underdeveloped north of the country.

The coffee skin and pulp are removed like regular coffee, but the sticky-sweet outer layer of the fruit remains, giving it a distinct flavour.

The farmer from Maled Coffee Roasters said: ‘Usually it takes about 15 to 30 days for the coffee to be ready after harvest, depending on the weather. For example, if the humidity is high, it will dry slowly.'
