This Thai street food vendor showed how tangy 'dancing shrimp' salad is made using writhing raw shrimp.
Stall owner Anyalak Roonrut said the local delicacy known as 'goong ten', often served in street carts in Thailand's northeast Isaan region, was a hit with her customers in Khon Kaen province.
The bizarre dish is made with fish sauce, ground chili, ground roasted rice, a homemade special sauce, and a generous shower of lime juice to give its distinct sour flavour.
After combining the sauce, clumps of freshwater shrimp inside a tank are scooped out with a net and dumped in a plastic container.
Anyalak then pops the lid on and shakes vigorously to mix the ingredients well before serving the salad - peppered with transparent, still-writhing shrimp - to hungry diners.
She said she buys her shrimp fresh every day to ensure they don't have a fishy taste.
She said: 'This dish is one of my favourites, but I couldn't find any stores that prepared it to my preferences, so I made my own recipe.'
She added that her goong ten was so popular that she decided to turn it into a business venture, which is still thriving today.
Aside from dancing shrimp, Anyalak's stall also serves 'koi hoi' - a similarly acidic salad but made with golden apple snails cleaned, boiled, then denatured with lime juice.
Anyalak said some of her customers often stopped by bringing their own rice containers to eat dinner at her stall.
She said: 'Each serving of goong ten costs 50 baht ($1.5). Our stall is open every day from 6pm to 9pm, except when the shrimp is unavailable.'
