Footage captured on May 29 shows Irving the women's race where dozens tumbled down the hill in the hope of winning a 3kg block of cheese.
Around 15 seconds into the clip the 19-year-old Canadian is seen landing face-first, knocking herself out.
Despite being unconscious, Irving still managed to reach the bottom of the hill first, winning the event.
Irving, from Vancouver Island, is heard speaking to journalists after her victory.
"I'm good, now that I remember it, I'm good. I remember running and then I hurt my head and then I woke up in the tent."
She also revealed that she thinks she'll attend next year's event to defend her title.
