Woman creates incredible healthy desserts using YOGURT— from low-calorie cookie skillets to high-protein cheesecakes Part 3/3
A woman has gone viral thanks to her rather unique and healthy spin on dessert recipes – using yogurt to make cheesecakes, cookie skillets, and carrot cake.
Amanda Esmailian started testing out her healthy recipes during the Covid lockdown in 2020, trying out her creations on her family.
The 27-year-old decided to share her recipes online, starting a YouTube channel in 2022.
She now shares her clever recipes with her 10,600 subscribers, who love her healthy take on fan favourites, allowing them to indulge in sweet treats without eating hundreds of calories.

“I love making, and of course eating, healthy and macro-friendly recipes.
”So I decided to create my socials to share my high protein, lower calorie recipes to help people reach their fitness goals.
“I’m also a certified nutrition coach, and personal trainer, so I’ve used the knowledge I’ve gained through these certifications to provide nutritional guidance.”
In one video, posted on her YouTube (@FitFoodAE) she revealed how to make a high protein, low calorie, cookie skillet, captioning the video: “High Protein, Low Calorie Pizookie, 38g Protein Giant Skillet Cookie! Chocolate Caramel.”
In the clip, Amanda pre-heats the oven before adding all purpose flour and chocolate protein powder to a bowl.
She then adds coconut flour, powdered peanut butter, cocoa powder, zero calorie sweetener, baking soda, egg whites, applesauce, and the bizarre ingredient… Greek yogurt.
She then pours the mix into a cast iron skillet, and tops it with melted Biscoff spread and chocolate chips
The skillet goes into the oven for 15 minutes and comes out looking brown, soft, and delicious, for only 449 calories.
The video gathered over 3,831 views, as well as hundreds of likes and plenty of comments.

Amanda started sharing more of her videos after noticing how well they were going down, all including her special ingredient- yoghurt.
She said: “They also taste great, obviously it's not going to taste like a full fat carrot cake with buttercream frosting... but it's moist, sweet, and satisfying.
“I make these desserts all the time, and my favourite is the cookie skillet!”
HIGH PROTEIN LOW CALORIE COOKIE SKILLET RECIPE:
Ingredients:
25 grams all purpose flour
25 grams chocolate protein powder
Eight grams coconut flour
12 grams powdered peanut butter
Five grams unsweetened cocoa powder
Five grams zero calorie sweetener
Three grams baking soda
50 grams egg whites
40 grams unsweetened applesauce
40 grams non-fat greek yogurt
Eight grams mini chocolate chips
10 grams biscoff spread
Method:
Combine all ingredients, dry first, then fold in the wet.
Spread batter into cast iron skillet tin.
Bake at 180 degrees for 15 minutes.
Serves one: 449 calories, 38 grams protein, 50 grams of carbs and 10 grams of fat per skillet.
NEW YORK STYLE PROTEIN CHEESECAKE:
Ingredients:
90 grams biscuit crumbs
32 grams light butter
20 millilitres of sugar free maple syrup
225 grams non-fat greek yogurt
225 grams fat free cream cheese
50 grams vanilla protein powder
30 grams zero calorie sweetener
Four millilitres vanilla extract
120 grams egg whites
Method:
Mix the biscuit crumbs, butter, and maple syrup in a bowl.
Grab a cheesecake pan, press the crust into the pan, and pop it into the oven for ten minutes.
While the crust bakes, mix the yogurt, cream cheese, protein powder, sweetener and vanilla extract.
Then, after mixing, add the egg whites into the mix and pour the filling over the crust.
Bake the cheesecake a 160 degrees for 25 minutes.
Then, after the 25 minutes is up, lower the oven to 100 degrees and bake for another 35 minutes.
Let it cool, store in the fridge, and there you have a beautiful, baked cheesecake.
Serves eight: 134 calories per slice, 12 grams of protein, 12.5 grams of carbs, three grams of fat - makes eight slices.
She has even come up with a healthy carrot cake recipe.
HIGH PROTEIN LOW CALORIE CARROT CAKE:
Ingredients:
20 grams vanilla protein powder
20 grams all purpose flour
10 grams coconut flour
Three grams cinnamon
Two grams nutmeg
Two grams ginger
Three grams baking powder
65 grams non-fat greek yogurt
55 grams egg whites
30 grams applesauce
40 grams grated carrot
Frosting:
15 grams vanilla protein powder
15 grams powdered sugar
60 grams low fat cream cheese
One Tablespoon cold water
Five grams chopped pecans
Shredded carrots for garnish
Method:
Mix together all of the cake ingredients in a bowl, adding the shredded carrot last.
Pour the mix into a mini cake tin and pop it into the oven for 20 minutes on 180 degrees.
While the cake is baking, mix the frosting ingredients together in a bowl.
When the cake is finished and cooled, add the frosting to the top and spread round the edges.
Then garnish with shredded carrot.
Serves one: 494 cals per cake.
