Confectioner shows how to make delicate 'Dragon's Beard' candy at street food stall in Thailand
A confectioner showed how to make delicate 'Dragon's Beard' candy at a street food stall in Thailand.
Footage shows the worker kneading a glossy chunk of sugar-based dough and forming it into a loose doughnut shape.
The dough is then stretched out and twisted repeatedly to create numerous thin silken strands which are dipped in a nutty toasted glutinous flour to prevent sticking.
When the strands are thin enough, the worker then rips the dough ring into several five-inch pieces and wraps them around sweet filling.
The delicious treats are being sold at the new Khon Kaen Dragon Beard Candy Factory stall at Central Rama 3 in Bangkok, and at The Mall Korat in Nakhon Ratchasima. The pop-up stores will be open from August 10 to 16.
Dragon's Beard Candy is a traditional Chinese confection made by meticulously stretching a sugar-based dough into delicate, fine strands resembling the mythical dragon's beard. It is often filled with nuts, dried fruits, or other sweet fillings.
The ephemeral cotton-candy like dessert is best eaten right away as it is highly sensitive to moisture and temperature.
