Ingredients for 6 Cookies:
* 60 g butter
* 60 g brown sugar
* 25 g white sugar
* 1 tsp vanilla sugar
* 1 egg
* 70 g all-purpose flour
* 20 g cocoa powder
* 1 tsp baking powder
* 80 g milk chocolate (chopped)
* 15 g mini marshmallows (plus some extra for topping)
Instructions:
1. Begin by melting the butter in a pot over medium heat. Continue to cook the butter, stirring constantly, until it foams and turns golden brown. Once done, remove the butter from the heat and let it cool off.
2. In a bowl, combine the cooled brown butter with the brown sugar, white sugar, and vanilla sugar. Mix these ingredients together until they are well combined.
3. Add the egg to the mixture and whisk it for 1-2 minutes until the mixture lightens in color and thickens slightly.
