Spain: Ángel León presents sea air bubbles at opening of Madrid Fusión
Madrid, Spain - January 27, 2025 Chef Ángel León, of the Aponiente restaurant in Puerto de Santa María, Cádiz, has managed to isolate a “particle of air” that guides birds at sea and will serve its customers encapsulated in a floating bubble. León has shared this Monday the novelties of his restaurant for 2025 at the start of Madrid Fusion that, over three days in Madrid brings together great chefs, sommeliers, winemakers, producers and gourmets will give a total of 250 presentations. León explained that from December to March he researches and reflects with his team, and that he arrives at Madrid Fusión with the desire to share “madly” his ideas, which he does not know if they will end up being served in the restaurant or not.
