STORYLINE:
In the northern outskirts of Kabul, Afghanistan's capital, most families use an age-old technique to preserve fresh fruits, particularly grapes, for up to six months.
This method, which uses an airtight mud container called Kangana, has been practiced for over a thousand years, especially by residents of Kabul's Kalakan district, and remains a thriving tradition today.
Made of mud, Kangana consists of two bowl-like sections that can be sealed after grapes are placed inside. When stored in early October, the grapes stay fresh until the end of March the following year.
In Afghanistan, the season of grapes starts in June and lasts until October.
