Serving Matured Whipped Sheep Cheese from a Leather Sack & Cooking Kashkek – Reviving Centuries-Old Bulgarian Traditions
This video captures a rare Bulgarian culinary event: opening a leather sack containing whipped sheep cheese, matured since May and prepared according to a centuries-old recipe passed down through generations—over 200 years old, and possibly reaching 500 years in history. The preparation also features kashkek, a traditional dish of boiled wheat and meat, once a staple for shepherds and now nearly forgotten.
After breaking the seal, the rich cheese was shared with the audience, following local custom. Traditionally, this delicacy is enjoyed with boiled potatoes. The video shows every stage: revealing the aged cheese, making and serving kashkek, and celebrating the revival of Bulgaria’s rural food heritage. Both dishes offer exceptional flavors and a unique window into authentic Bulgarian cuisine and history.
