Chefs prepare early with traditional Christmas cake mixing ceremony in Tamil Nadu
Indian chefs gathered for a traditional Christmas cake mixing ceremony a month ahead of the festival day itself.
Large quantities of fruits, nuts, juices, spices, honey, liquor and wine were thoroughly mixed together by the assembled cooks.
The advance prep is thought to enhance the flavour and aroma of the final cake.
The Christmas cake mixing at Hotel Gem Park in Ooty in Tamil Nadu, was more low-key than usual due to the pandemic.
Fewer people were able to witness it, although it was attended by hotel staff and executives, observing social distancing and wearing masks.
The size of the cake mix was also smaller -- only 65kg (143 pounds) this year.
Executive Chef Mr Surendran pronounced himself happy with the thoroughness of the mixing.
