Just A Name of "Egypt" Food Which is Made by Minangkabau-People

Martabak mesir or martabak kubang is a snack made from a flour dough filled with eggs, seasoned meat (mainly minced beef rendang), and scallions and served with vinegar sauce and comes from Nagari Kubang in West Sumatra province, Indonesia. People outside West Sumatra, more often refer to it as Martabak Kubang. There are also those who call it Martabak Padang, because non-Minangkabau people are more familiar with the ethnicity of the seller as Padang people.

The Egyptian martabak looks similar to the egg martabak, but differs in the ingredients used and the presentation. This food is also a blend of Middle Eastern - Indian flavors with local Minang flavors.
The origin of the martabak, including the Egyptian martabak, is from the Middle East and India. Martabak comes from the word mutabbaq which means "folded", referring to the flatbread food that is folded when it is made. In the past, while trading, there was also an acculturation of Arab and Indian culture with the local community, including in terms of food. Martabak by Arabs and Indians is served with various types of preparations and spices.

The term "Egyptian" in this martabak arose because at that time this food was first brought by black Arabs and Indians. Then it became misguided by the local people and was referred to as "Egyptian". Until finally called Martabak Egypt by the local community.

Apart from that, the local community likes the martabak so that it is combined with Minangkabau flavors. The mixture of ground beef used as a filling for martabak is mixed with various spices to resemble Rendang meat.

The Egyptian Martabak was originally introduced by a merchant from Kubang named H. Yusri Darwis, known as Hayuda, in 1971 on Jalan M Yamin, Padang. At that time the first outlet was opened with the name "Martabak Egypt Kubang" which was identical to the photo logo of the founder, but at the time of registering the patent the word "Egypt" could not be used because it was the name of the country. So the name changed to Martabak Kubang Hayuda. Since entering Jakarta in 1988, this outlet has had 4 branches: Tebet, Kali Malang, Margonda (Depok) and Kedung Halang (Bogor).

Until now, the Egyptian martabak is not only known in West Sumatra and Jakarta, but has been introduced to various regions by immigrants from Kubang who opened an Egyptian Martabak business in their area to wander.
