Birch sap is actually a very common drink in Russia. Nationals often head to the birch groves with flasks and drills or spikes to collect the fluid in the small window in which it's possible - the sap is a seasonal delicacy that can only be procured between the March-May period as the snow starts to thaw.

Birch sap generally tastes similar to water, but slightly sweet yet acidic simultaneously.

Birch vodka is also very popular in Russia.
