This durian shop serves delicious 'sticky rice ice cream sandwiches' using the controversial spiky fruit as the bun.

Thu Riam Kham Toh, a popular durian store in Khon Kaen province in Thailand's northeast region, created a new menu item fusing a traditional sticky rice dessert 'khao niao' with mounds of refreshing ice cream.

Store owner Mayura Muangrod, 32, de-seeds her durian and piles on the khao niao filling, along with several scoops of ice cream.

The sweet treat is nestled between slices of custardy durian flesh that act as 'buns' for the sandwich, which is then topped with crunchy peanuts providing a nutty flavour contrast.

Mayura said: 'I initially opened my durian store in Prachinburi and expanded with a second branch in Khon Kaen since it is closer to my hometown of Maha Sarakham.

'The hot weather and customers' demand for a cold durian dessert inspired me to make this recipe, which has become quite popular, especially with children.'

She added that her ice cream sandwiches sell for between 30 to 50 baht ($0.9 to $1.5) depending on the weight of durian used.

Her store is located along Klang Mueang road near the Fairy Plaza and operates daily from 9:30 AM to 9:30 PM.
