Manufacture of kolang-kaling in Indonesia for Ramadan season

Village Caruluk in Cianjur, West Java, Indonesia is one of the main places of kolang kaling manufacturing. Kolang kaling, botanically classified as Arenga pinnata, are fruits that grow on a tropical palm that can reach up to twenty meters in height and belongs to the Arecaceae family. Kolang kaling is a typical food of the holy month of Ramadan. About twenty craftsmen in the village produce it every year.
Even in the conditions of the pandemic the craftsmen still get a lot of orders from a number of traditional markets in the district of Cianjur. To be able to fulfill the orders craftsmen involve their family members or other citizens in producing kolang kaling.
Kolang Kaling is best suited for cooked preparations such as boiling, and the immature fruits are the preferred state for consumption. The fruit is removed from the outer, fibrous shell and then boiled to create a soft and chewy texture.
