Luoyang Water Feast is a unique traditional banquet in the Luoyang area of Henan Province, belonging to the Henan cuisine. Luoyang Water Feast originated in the Tang Dynasty and has a history of over 1000 years. It is one of the oldest preserved famous banquets in China to date.
Luoyang is surrounded by mountains on all sides, with a dry and less rainy climate and limited fruit production. In ancient times, the climate was cold, so the folk diet was mostly soup, which was used to resist the cold with sourness and spiciness. The ingredients are mostly local yams, radishes, cabbage, starch, etc. It can be seen that the ingredients of Shuixi emphasize economy and practicality, rather than being rare and precious.
