Across the Iraqi capital, from the historic Al-Kadhimiya district to bustling local markets, the crisp, golden layers of Kahi—a flaky, oven-baked pastry —were paired with thick, creamy with geymar, a rich, creamy clotted cream, often drizzled with date syrup or honey. For many, this meal is more than sustenance; it is a taste of identity, a link to generations past. In Al-Kadhimiya, the famed Al-Mulhani Market buzzed with activity before sunrise. Known since the 1920s as Baghdad’s go-to destination for authentic Kahi, its vendors worked tirelessly to meet the Eid demand. Eid al-Adha, the "Festival of Sacrifice," commemorates Prophet Ibrahim’s willingness to sacrifice his son in obedience to God. Marked on the 10th day of the Islamic month of Dhu al-Hijjah, it coincides with the culmination of the Hajj pilgrimage. The holiday begins with communal prayers, followed by the ritual sacrifice of an animal—typically a sheep, goat, or cow—with the meat distributed among family, neighbors, and those in need.
