A thin sheet of yellowish dough comes from the stainless device, which was cut into strips and dumpling wrappers.

The recipe has been passed on to four generations, with the current shop being run by the grandparents, with their children and grandchildren helping out.

Local Tran Nguyen Khanh: ‘The secret to making the dough will be given to the children but they make the noodles fresh every day as a family.'
