In a video captured by Mr Li, the cook demonstrates the traditional preparation of Daoxiao noodles in Pingcheng, Datong, Shanxi, on September 3.

He uses a knife to scrape the dough from a large block, creating irregularly shaped noodle strands directly placed into boiling water.

This hand-shaving technique, distinctive to Daoxiao noodles, gives them a unique texture and thickness that sets them apart from other noodles.

Daoxiao Noodles, a traditional specialty from Shanxi Province, are celebrated for their chewy texture and rich flavor. They are recognized as one of China's Top Ten Noodles, reflecting the region's rich culinary heritage.
