Roti-Sai-Mai, a colourful dessert originating from the Muslim community in Ayutthaya province, is made from candy floss and thin crepes.

The dough is made from wheat flour, it can also be made with tapioca starch mixed with salt and sugar. The ingredients are mixed before leaving the dough to rest for 30 minutes. The chef would then put the sticky dough over a hot pan, creating a mesmerising visual.

As for the candy threads, hot boiling sugar is poured on an aluminium platform and stretched with two wooden sticks back and forth, finally producing beautiful lines of cotton candy.

While its preparation can be tricky, the finished product is simply eaten by putting the rainbow-coloured floss over the thin flour sheet and rolling it.

The Thai Muslim dessert can be bought from roadside stalls while driving in and out of the province. It can also be purchased from markets in Bangkok from between 50 and 200 Thai baht per set.
