Old-school environmentally friendly process of making noodles in Indonesian factory
This video shows the traditional Javanese process of making noodles following the original recipe. This factory is situated in Sandakan, Bantul, Yogyakarta, and is proud to be environmentally friendly.
The factory has been divided into three different sections of work which include flour milling, pressing, and drying. Each section is done manually.
The flour milling workers use a brahman cow as the power to move the traditional stone mill, which using the circular motion of the cow around the mill, grinds the flour until it's perfect to move to the next step.
Once they've gotten the desired density, steamed cassava it's added to the mix and the process starts again. The cow starts moving around the mill, moving the stone mill until the dough is perfectly blended. The quality of this one will affect the quality of the final product.
The next step of the process is the pressing machine. Here the dough will take the shape of the noodles and depending on how good was the blending, the noodles will reach a better quality or not.
Right after being pressed, they are displayed in a drying tray to be aerated for 30 minutes. Once this time has passed they move to the drying oven for 1 hour and 30 minutes and right after this they are packaged and ready to be sold.
This traditional process does not need diesel nor electric motors reducing the pollution and the sound levels to a minimum. There have been no complaints to the factory since it started operating and it has had a positive impact on the local economy of the village.
