A Thai street food vendor sells delicious crispy coconut-flavoured roti served inside young coconut husks.

Stall owner Pornsri Nuyao, 44, thought of the idea when she noticed that foreign tourists tend to like snacks mixed with sweet tropical fruit.

To make the tasty treat, Pornsri first chops off the top of the green coconut and grates the tender white meat inside. She then takes a sheet of the stall's signature roti dough and fries it in some oil and butter.

Once the bread is slightly crispy, she adds a mixture of egg and coconut and continues frying until the dessert is golden brown. The roti is then folded and cut into bite-sized pieces before being placed inside the empty coconut husk. Customers can also avail themselves of add-ons like corn and sugar palm seeds for an additional 15 THB.

Pornsri, who sells the dish from her stall in Surat Thani, Thailand, said: 'This shop has been open since before the Covid-19 outbreak. I saw that most tourists liked to eat young coconuts so I started making coconut roti too.'

The cook said her sales dipped during lockdowns but she reopened when travel restrictions eased and have business is booming again.
