The process of making salted fish from tuakang fish, typical of Riau, uses canals
Many canals were made by the company for flood control and function as land boundaries and water sources in case of forest fires in Riau. This channel has many benefits. Tuakang fish are caught or taken from the fishery. A lukah is a net made of nylon thread and has a hole on one side for fish to enter. This hole is conical so that if the fish enters it cannot get out again.
Many fishermen have used the canals to find tuakang fish. Tuakang fish can be harvested every day. Then the fish is cleaned and dried in the sun to dry. Previously, the drying process for the tuakang fish, which had been cleaned from the entrails and head, was soaked in salt water so that the fish would taste salty later.
The process of drying the salted fish takes two to three days and after it is dry, the salted fish, typical of Riau, is ready to be sold.
