厨师将速冻饺子连袋煮引争议 或释放有毒物质
8月31日,中国广东的一餐馆内,食客记录下厨师将速冻饺子连袋煮的过程。
视频显示,厨师在煮速冻饺子时,未拆除塑料包装袋,直接将整袋饺子投入正在煮面的锅中。煮制过程中,透明的塑料袋与饺子一同在滚烫的水中上下翻腾。数分钟后,厨师用漏勺捞出饺子袋,撕开包装,然后把饺子倒入碗中。
此画面曝光后,迅速在网络上传播,引发网友对食品安全的广泛担忧。
食品专家指出,速冻饺子的塑料包装袋一般由聚乙烯(PE)制成,其耐热温度通常在70-90℃左右,而水的沸点接近100℃。当包装袋在沸水中长时间煮制,很可能会释放出如双酚A(BPA)、邻苯类增塑剂等有毒有害物质。长期摄入这些物质,会对人体的内分泌系统、生殖系统造成严重损害。此外,塑料袋表面印刷的油墨并非完全无毒,在高温条件下,这些油墨中的化学物质更易溶出,伴随食物进入人体。
一位从事餐饮行业的人士表示,后厨操作有着严格的流程,拆袋、解冻、清洗、下锅,每一步都不可或缺。这种带袋煮的操作,要么是员工培训不到位,要么就是商家为节省时间和成本故意为之,本质上是缺乏职业道德的表现。
